    Shunsai Kubo Hwamyeong

    17, Yangdal-ro 4beon-gil, Buk-gu, Busan, South Korea, 1st Floor, Geumsam Building

"Carefully grilled Hitsumabushi, Shunsai Kubo Hwamyeong" Located in Hwamyeong-dong, Busan, this specialty Hitsumabushi restaurant has been carrying on the Blue Ribbon tradition since 2019, and has been selected for 7 consecutive years as well as for the Michelin Guide Busan 2025 for 2 consecutive years. They grill domestic Japonica eel with a special sauce with great care, and you can observe the cooking process in an open kitchen. The menu focuses on freshwater eel and sea eel, offering a complete meal with appetizers like salad and tempura, chawanmushi, yakumi, ochazuke dashi, and dessert matcha pudding, all served in a course-like arrangement. There are also children's menus available, making it suitable for family visits. Due to the limited number of tables, reservations are recommended, and there is a private room available for gatherings. Convenient parking is available in the building and at a public parking lot, and the staff are friendly and attentive to the food, making it a low-pressure choice for dining with parents. We recommend enjoying the Hitsumabushi style with the provided yakumi and ochazuke dashi.

"When you want to enjoy the lightness of dumplings in Deokcheon, 'Pyongyang House' is the place to go." Located near Deokcheon-dong and Deokcheon Station, this restaurant specializes in North Korean-style dumplings. It has gained attention after being selected by the Michelin Guide Busan, offering a chance to taste the simple and clean flavors of Pyongyang-style dumplings. The main menu includes mung bean pancakes, tofu dumplings, and kimchi dumplings. The mung bean pancakes have a crispy exterior and a fluffy interior, enhanced by various vegetables like bean sprouts, while the tofu dumplings are characterized by their large size and clear meat broth. The kimchi dumplings are mild, not overly spicy or salty. As for the side dishes, you'll find flavorful options like salted seafood and seasoned perilla leaves that pair well with the light dumplings. If you prefer stronger, more intense flavors, you might find it a bit bland, but if you enjoy the clean taste of Pyongyang cuisine, this restaurant will surely satisfy you.
